Ingredients:
- Dates (Kajur) – 7–8, finely chopped (must)
- Dry Fruits
(Cashews, Almonds, Pistachios, Raisins) – as desired, finely chopped - Pure Ghee (Tup)—2–3 tablespoons (plus extra for frying dry fruits)
- Milk (Dudh) – 1 liter
- Water – ½ cup
- Sugar (Sakhar)—to taste
- Vermicelli (Sewai)—about 50–70 grams
- Cardamom Powder (Elaichi)—½ teaspoon (optional)
- Saffron (Kesar)—a few strands (optional, for aroma and rich color)
Method:
1. Prep and Fry Dry Fruits & Kajur
- In a small pot, boil chopped dry fruits and dates (kajur) in water for 5 minutes.
- Drain and finely chop if not done earlier.
- Heat 1–2 tablespoons of pure ghee (tup) in a pan.
- Lightly fry the boiled dried fruits and cashew until golden and aromatic. Remove and set aside.
2. Simmer the Milk
- In a large, heavy-bottomed pan, add 1 liter of milk and ½ cup of water.
- Simmer the milk on low flame until it slightly thickens and turns yellowish in color.
(Stir occasionally to avoid sticking.) - This slow cooking gives Sheer Khurma its rich, creamy texture.
3. Add Sugar and Dry Fruits
- Add sugar to the simmering milk as per your taste.
- Add the fried dry fruits and kajur.
- Let them cook together on low flame for 5–7 minutes to absorb the flavors.
4. Roast and Add Vermicelli
- In a separate small pan, roast the vermicelli (sewai) in a little ghee until light golden.
- Add the roasted vermicelli to the milk mixture.
- Cook everything on low flame until the vermicelli softens but is not mushy (about 5 minutes).
5. Final Touch
- Finally, add 2–3 tablespoons more ghee into the Sheer Khurma.
- Mix well and cook for just 2 more minutes.
- Optionally, add a pinch of cardamom powder and a few strands of saffron for an aromatic, festive touch.
